Oi Kimchi - Quick Cucumber Banchan
Nothing screams the Holidays like the perfect spicy Banchan.
I am excited to share this new and improved version Of Oi Kimchi with you
1 large English Cucumber sliced
3/4 cup sliced carrots
1/2 thinly sliced onions
2 tablespoons salt
Mix together and place in a strainer for 30 minutes. Then wash and let drain for 10 more minutes
Mix Together
4 tablespoon gochugari red pepper flakes
3 tablespoons seasoned Rice Vinegar
1 1/2 tablespoons Sesame Oil
2 tablespoons sugar
2 tablespoons Tamari
2 tablespoons Fish Sauce
2 -3 small dried Shrimp finely processed/chopped
3 cloves Chopped garlic
3 green onions
Mix with Cucumbers, onions and carrots and serve immediately. Or save it. It only gets better with time.
Sesame seeds for garnish
