Sugar Free - Jap Chae

Korean Jap Chae with Agave and Tamari

Sugar Free and Gluten Free

Serves 12 - 15 Peoples

Recipe:

Ingredients:

  • 1 package dried Korean sweet potato noodles (34 servings)

  • 2 cups matchsticks carrots

  • 2 zucchini’s

  • Crushed Garlic

  • 1 1/2 cup thinly sliced onions

  • 2 Colored Peppers thinly sliced

  • 3 green onions diced

  • 2 cups mushrooms sliced

  • 2 lbs spinach

  • 2 lbs sliced beef - bottom round or similar cut

  • Tamari

  • Agave

  • Sesame Oil

  • Sesame seeds

  • Salt and Pepper

Step 1: Marinade Beef in 1/4 cup Tamari, 2 tablespoons Agave, 3 tablespoons Sesame Oil, 3 cloves crushed garlic and rest for 2 hours

Step 2: Cook veggies one at a time and set aside. For each veggie use 1 tablespoon sesame oil, salt, pepper

Step 3: Sauté Meat for 5 - 10 minutes until cooked thoroughly and set aside

Step 4: Mix sauce ingredients; 1/3 cup Tamari, 1/3 cup agave, 1/4 cup sesame oil. 2 teaspoons crushed garlic combine well

Step 5: Boil water, add noodles and cook according to instructions, drain, cut with a scissors and set aside

Step 6: In a very large serving bowl and while the noodles are still hot put all the ingredients together pour over sauce and mix well. If the noodles are not too hot mixing by hand works best.

Step 7: Adjust seasonings to taste! The noodles absorb the dressing and you may need to add a bit more seasoning and adjust before serving. Should be served at room temperature.
