This simple easy Crockpot dish creates world class chicken taco’s that can be on the table in no time. They are quick to assemble in your crockpot and with a few stand out toppings to dress things up you will have chicken tacos that will rival any taco stand.
Recipe
Ingredients:
2 lbs Chicken Breast
1/2 onion sliced and added to the bottom of the crockpot
Juice of 1 lime
3 tsp salt
1 tablespoon packed brown sugar
2 teaspoon minced garlic
1 teaspoon chili powder
1 teaspoon cumin
1 cups of chicken broth
Step 1: in a bowl combine lime, salt, brown sugar, garlic, chili powder, cumin, chicken broth
Step 2: In a crockpot first add the onion, then the chicken and finally pour in the liquid
Step 3: Cook on high for 2 hours and reduce to low till ready to serve
Step 4: Take the chicken out of the juices and shred it on a cutting board. Let all the juices run off as you don’t want soggy taco’s! You can even put the shredded chicken in a bowl with paper towels to soak up extra juices.
Step 3: lightly fry corn tortilla’s on both sides in a skillet sprayed with oil.
Step 4: Assemble tacos with your favorite toppings such as homemade salsa cabbage, lettuce tomatoes, shredded cheese, sour cream and/or guacamole.
For a low carb Chicken Taco night add the chicken on top of a cabbage carrot kale salad and top with your favorite toppings.
