Meat and Cheese night at the Filla’s Turning Mondays into Fundays. I love Cheese, all cheese but sometimes I buy it and then it sits in the fridge while we wait for that “special moment” to break it out with a good wine pairing. Well starting this month we will have one Monday a month set aside for dinner around the Island to be sure we “break out” the Wine and cheese.
Ever get tired of bland, lifeless, leftover spaghetti noodles? I recently made spaghetti from scratch, a bit too much from scratch, and we had leftovers for a few days. We kept them separate from the sauce as they were a little soft and fragile to start. To revive the noodles for eating, I simply stir-fried them with butter and olive oil, some pepperoni, parmesan and bread crumbs.
I created this recipe last summer when I was asked to feed 240 people for lunch at a retreat in early October, 2018. I made it several times for the family trying to perfect both the texture, the price per serving and flavor. I wanted an egg bake with some structure and a bit of crunchy crust that would give some contrast to the typical softer egg casserole texture. Adding a layer of Cheese on top as well as incorporating some in the crust helped to achieve the contrast I was looking for. Success. A filling yet frugal casserole that can feed a crowd!
The Big BLEG Brunch Pizza with Bacon Lettuce Egg and Goat Cheese. I had a left over pizza crust from Mondays Pizza fest and brushed it with butter, added some spring lettuce, goat cheese crumbles, a bit of Mozzarella around the edges, 3 cracked eggs nestle in the lettuce and that half cooked bacon on top. Baked on a Cast Iron pizza stone at 450 for 8 - 10 minutes or until the egg whites were cooked.
