Why do I love Kimchi so much?

Seriously, what is it about this crazy smelly fermented spicy cabbage that keeps me coming back to it over and over and over again. I crave it often, even for breakfast! It is a bit time consuming to make but worth it. And honestly I can take no credit whatsoever for how to do it. The process of make this recipe and perfecting it is a bit elusive to me so to start I had to consult with the experts. Here is a list of my favorite Korean Kimchi Recipe Internetters who have shared their passion for Korean cooking with the world. I pulled a bit from each of them to come up with my version today, which is still evolving. More to come on that in future posts. This was my third homemade Kimchi attempt and by far my best. Very enjoyable
