Griddle Cakes with Blueberries
Kick Up Your Pancakes A Notch!
I don’t think people know how much of a difference buttermilk makes when making pancakes. It turns ordinary pancakes into celestial cakes. Cooking them on a griddle with butter kicks it up another notch. You won’t go back. Give it a try!
Recipe:
1 cup flower
1/2 Teaspoon Baking Soda
1 Baking Powder
1/2 Teaspoon Salt
1 Egg Beaten
1 Cup Buttermilk
3 Tablespoons Avocado Oil
Mix the dry ingredients then add wet ingredients and let sit for 10 minutes as bubbles will form. Place butter in a cast Iron Skillet on medium heat. Pour about 1/4 - 1/3 cup of batter per pancake. Let the first side cook until air bubble arise and begin to pop. Do not have the heat too high as the bottoms will burn before the bubbles appear. Flip once you have the bubbles going throughout. The second side doesn’t take as long! Serve with Blueberries, powdered Sugar and maple syrup.
