Bacon Lettuce Goat Cheese Pizza with Egg

If you haven’t tried this for breakfast or brunch it is a must. The Big BLEG Brunch Pizza with Bacon Lettuce Egg and Goat Cheese. I had a left over pizza crust from Mondays Pizza fest and brushed it with butter, added some spring lettuce, goat cheese crumbles, a bit of Mozzarella around the edges, 3 cracked eggs nestle in the lettuce and half cooked bacon on top. With the high oven heat you don’t want the bacon to burn so alternatively you can cook the back fully and dress the pizza with bacon at the end. I Baked this on a cast iron pizza stone at 450 for 8 - 10 minutes or until the egg whites were cooked.

Ingredients:

  • 1 pizza crust

  • 1/3 cup crumbled goat cheese

  • 1/3 cup mozzarella cheese

  • 1 cup of spring lettuc

  • Butter

  • 3 eggs

  • Bacon

  • Cracked Pepper

Assembly instructions:

  • butter the crust

  • Add 1/2 the goat cheese

  • spread the spring lettuce all over the crust to the edge

  • Sprinkle mozzarella around the edges

  • Sprinkle the rest of the goat cheese on top of the lettuce

  • crack 3 eggs gently and strategical around the curst

  • Sprinkle half cooked bacon top, or fully cooked bacon at the end.

  • Cracked Pepper all over
