Heal Me Now Chicken Soup
Chicken Soup the Way you want it!
I’ve been a bit under the weather for the past few days and there is nothing, I mean nothing is more comforting than Chicken Noodle soup. But now it is more healing and more versatile than ever with my Heal Me Now Version of this soup served up anyway you want it. With Noodles? Sure, Without noodles? No problem. With Rice, gotcha. And storing leftovers has never been easier. Here is the Recipe.
The recipe below makes 4-6 bowls of soup depending on how you serve it. I tripled this to make 12+ large servings. There were 9 of us eating and we did not have much for left overs
1 Quart of Home Made Bone Broth (See Link Below)
1 chicken Breast
1 Chicken Thigh
1/3 cup Onions
1/3 cup Carrots
1/3 cup Celery
2 tablespoon Olive oil
1 tablespoon Butter
Thyme
Parsley
Salt and Fresh Ground Pepper
A bit of Turmeric
1/4 cup cream and 2 teaspoons corn starch mixed together
Step 1: Sauté Chicken in a pot with 1 tablespoon Olive Oil, Salt and Pepper . Brown on both sides and remove from Pan. You don’t need to cook it all the way through.
Step 2: In the same Skillet sauté the Veggies with 1 tablespoon Olive Oil and 1 Tablespoon butter. Brown for about 5 - 7 minutes.
Step 3: Add the Broth, Thyme, Parsley, and return the Chicken to the pot. Simmer for 45 minutes
Step 4: remove the chicken, Shred it and return it to the pot
Step 5: Return Chicken and add the corn starch and cream . Simmer for 15 more minutes
Serve with Fresh Bread
The best part of this healthy family friendly soup is that you can serve it anyway you like. We have kids who are not eating carbs and just eat the soup as is. Some add cooked rice or cooked pasta or just use bread. We don’t like to add a starch to the pot because it doesn’t keep well. This way the left overs are perfect and can be served again… just how you like it.
